Perfect soup on a cold winter day
I love to make this soup. My daughter adores it. She is my broccoli lover, but you don't have to love broccoli to love this soup! If you use the chopped broccoli, it's not even all that noticeable. The full body cream and rice flavor is what really comes through. I have given this recipe out many times over because so many people, and their kids, love it.
Not only is this a super easy soup to make, it is super filling. If you like, you can add 1 cup more of water for a thinner soup. If you have leftovers, it will be very thick the next day due to the rice absorbing more of the liquid. You can remedy that by adding a little milk to thin it out before re-heating.
Sometimes I add meat, and sometimes I don't. I often serve crumbled bacon or homemade croutons on top. You can also add a dollop of sour cream or greek yogurt for extra creaminess.
